Red Raspberry Chocolate Bars
You will be the hit of any gathering with these scrumptious, decadent cookie bars. A stand mixer is a must and will help to make this recipe simple and quick. Best of all, no dropping individual cookies! Spread in a pan, bake, cool and cut!
Holiday Red Raspberry Chocolate Bars
Makes 36 Bars
2-1/2 cups all-purpose flour
1 cup sugar
3/4 cup finely chopped pecans
1 egg, beaten
1 cup (2 sticks) cold butter
1 jar (10 ounces) seedless red raspberry jam
1 pkg (12 ounces) dark chocolate chips
1. Heat oven to 350 degrees. Grease 13x9x2 inch baking pan or use parchment paper.
2. Stir together flour, sugar, pecans and egg in bowl of stand mixer. Cut in butter using the flat beater attachment on low speed until mixture resembles coarse crumbs. Set aside 1-1/2 cups crumb mixture.
3. Press remaining crumb mixture on bottom of prepared pan. Stir jam to soften; carefully spread over crumb mixture in pan. Sprinkle with chocolate chips. Crumble reserved crumb mixture evenly over top.
4. Bake 40 to 45 minutes until lightly browned. Cool completely in pan on wire rack; cut into bars.
